This spring, Chef Makoto Arami of AMI Patisserie unveils a refreshed Chef’s Table Discovery menu alongside brand-new additions to the à la carte Patisserie Café menu

A pastry-led six-course tasting menu priced at $118++ per person, the Chef’s Table Discovery Experience offers a thoughtfully curated journey of sweets and savouries, celebrating the peak flavours of seasonal Japanese produce such as the Hokkaido Crab Tartelette. Seasonal tarabagani from Hokkaido is cradled in a signature filo pastry tart together with fromage blanc cream, green apple from Aomori, Amela tomato, dashi jelly, Hokkaido scallop and housemade pickles from young ginger, also now in season. Each dish is meticulously finished à la minute and personally presented by Chef Makoto Arami at the intimate 8-seat counter within the private Tsudoi Dining Room. 

Just as the Chef’s Table Discovery Experience celebrates the best of Japanese produce, the new additions to the Patisserie Café introduce a delightful range of offerings that seamlessly complement the signature menu staples such as Whiskey Salmon & Ricotta Focaccia ($18.40++) where Scottish smoked salmon tops housemade green olive focaccia.
