Bedrock Origin’s Great Beef and Reef Series returns with its third and final edition for 2024, celebrating the art of ageing meats. Drawing inspiration from Bedrock Origin’s idyllic coastal address, the Great Beef and Reef Series is centred around surf and turf, featuring the best of land and sea with diverse ingredients such as seafood, harvests, and beef from around the world.

Available from 4 July to 30 September 2024, Sundays through Thursdays, Bedrock Origin presents a six-course Dinner Tasting Menu ($138++/pax) with an option to enhance the meal with a meticulously selected five-wine pairing (add $68++/pax) of Californian wines. These wines range from crisp and refreshing whites to bold and complex reds with a longer finish, complementing well with the menu’s flavours. The wine pairing is complimentary during the launch dinner on 4 July 2024, with any order of the Great Beef and Reef III six-course Dinner Tasting Menu.

The first course whets the appetite with the Marinated Scallops, featuring sliced Hokkaido scallops marinated in a lively mix of pickled gooseberry, shallots, coriander, and lime juice. An herb oil made from basil and parsley highlights the scallops’ sweetness, while fried grass shrimp and sorrel flowers add texture and colour.

Following this is the Salt Cured Sardines. Raw Japanese sardines are cured in salt for two hours, then lightly pan-seared and presented on house-made sourdough toast. Accented with sour cream, olives, and red peppers, the dish offers a well-balanced taste of tanginess and sweetness that supplements the sardines’ richness.
