From 1 July to 30 September 2025, 67 Pall Mall Singapore welcomes Chef Kenjiro ‘Hatch’ Hashida of IYASAKA by Hashida for the next chapter of its 2025 Resident Chef Series.

For the next instalment of the Series, Chef Hatch of IYASAKA by Hashida takes the stage with his singular brand of progressive Japanese gastronomy. This marks the first time the Club features Japanese cuisine and a Japanese chef in the Series - a noteworthy milestone that opens up fresh dimensions of pairing potential with wine.

Chef Hatch presents a line-up of all-new a la carte dishes (from $18++ to $60++), draw from the height of Japanese summer. Led by a penchant for innovation and himself a lover of wines, he views the residency as a creative challenge: to approach Japanese cuisine from an unconventional angle, keeping its dynamic synergy with wine in mind.

Inspired by Chef Hatch’s inventive approach, imaginative pairings (from $15++ to $35++ per glass) venture beyond the traditional. 67 Pall Mall Singapore’s Assistant Head Sommelier Yi Ying Yong focused on bridging the layered umami and texture-driven elements of Chef Hatch’s original creations with pours that deliver both balance and distinct character. Showcasing stylistic range and regional diversity, the list includes lesser-known varietals such as Garganega from Soave, Italy and Pedro Ximénez from Spain, as well as Nigori sake — a first-time feature at the Club.
