From now until 31 August, Shisen Hanten by Chen Kentaro presents a 7-course menu ($108++ per diner), available for both lunch and dinner, inspired by the friendship between two cultural icons — Chef Chen Kenmin, the “Grandfather of Szechwan Cuisine” in Japan, and influential 20th century Chinese ink painter Zhang Da Qian. Both hailing from Sichuan, China, the pair shared a mutual appreciation for artistry. This special menu revives dishes once enjoyed by Zhang during his visits to Shisen Hanten in Tokyo. This limited-time menu brings that legacy to life with a 7-course homage to Zhang Da Qian’s favourite dishes — prepared by Chef Kentaro with the same artistry and pride passed down through generations. Highlights include:
- Fried Chicken with Hot Pepper Sauce - Zhang Daqian Style: A twist on kung pao chicken - succulent thigh meat, mushrooms, and peppers dance in a sauce of fermented bean paste and chilli oil.
- Stir-fried Assorted Vegetables: A refreshing medley of julienned cabbage, celery, and bamboo shoots - a dish often requested by Zhang to balance the meal.
- Tea-Smoked Duck – Szechwan Style: Marinated with a dry rub of Qi Men Hong Cha for up to two days, the duck is smoked over Japanese rice and hinoki leaves, then served with pillowy mandarin rolls.
