In winter 2025, Fat Cow unveils a new chapter of its Shiki Omakase series. Curated by Head Chef Shingo Iijima, the Winter and Okinawa editions celebrate the colder months and Japan’s southern islands through deeper umami, gentle warmth, and quietly luxurious textures — expressed with meticulous technique, premium seafood, and Kagoshima Akune Gold A5 Wagyu. Guests are invited to savour the seasons through multi-course experiences, from concise lunchtime journeys to elevated evening menus and a limited-time Okinawan takeover.
12-Course Winter Shiki Omakase (from 15 December 2025) is priced at $88++ (lunch), $98++ (dinner), or an enhanced $118++ experience. Highlights include Madai, Mekajiki Yuan Zuke (soy–citrus marinated swordfish), Sujime Buri, Kobujime Hirame Bo-Sushi, Hotate with aged soy, Aka Ebi tartare with optional Kaluga caviar, Kuruma Ebi, and tuna served over bamboo charcoal sushi rice. The $118++ menu adds Otoro nigiri, a Smoked Kagoshima Akune Gold A5 Wagyu handroll with leek, and a Mini Chirashi Sushi featuring Wagyu, chopped tuna, Hokkaido uni, ikura and caviar.
