This summer, Fat Cow, the Japanese Wagyu specialist and fine dining destination, unveils a refreshed seasonal edition of its Shiki Omakase. Available for both lunch and dinner at $88++ per guest, the 12-course repertoire stays true to this ethos while introducing a refreshed lineup of dishes inspired by the summer season. This edition also marks the debut of a new format at $118++ per guest — an elevated interpretation of the experience, featuring refined enhancements across select courses. Highlights of the refreshed summer menu include:
- Suzuki - Japanese sea bass, brushed with white shoyu and lightly seasoned with sudachi and sea salt, allowing the clean, subtle flavour of the fish to shine
- Ma-aji - Japanese horse mackerel marinated in aged soy sauce and mirin, then paired with a light onion sauce that brings out the natural richness of the fish
- Anago Bo-sushi - Aburi-style conger eel that is lightly torched and finished with a nutty sesame paste, adding a touch of smokiness and depth
To further elevate the dining experience, Fat Cow offers curated sake pairing flights designed to complement the refined flavours of the omakase. Guests may choose between a three-glass flight (additional $88++/pax) or a five-glass flight (additional $138++/pax), both featuring selections from Heaven Sake.
