Firebird by Suetomi – the first overseas offshoot of the famed yakitori restaurant, Makitori Shinkobe, which boasts a one-year waiting list in Japan – launches on 7 May 2025.
Firebird presents an intimate tori-focused wood-fire omakase, brought to life through a partnership between Singapore-based Ebb & Flow Group and celebrated Tokyoite chef and serial restaurateur Makoto Suetomi. The dining experience showcases meticulously sourced chicken and seasonal ingredients all kissed by fire from a wood-fire grill modelled after the original at Makitori Shinkobe.
The experience is complemented by a handpicked selection of sake, shochu, wines, spirits, beer, and highball cocktails. This unfolds in a sophisticated and inviting setting: a 12-seater dining counter, a 5-seater bar, and an 8-seater private dining room inspired by a hidden ‘house within a house’ concept.
