On 26 November 2025, F&B luminary Chef Damian D’Silva opens a restaurant dedicated to a very special person in his life — ‘Pop’. Gilmore & Damian D’Silva, a premium-casual concept by OUE Restaurants and Chef Damian, is housed within National Gallery Singapore in the former Supreme Court wing. Chef Damian’s grandfather — known endearingly as ‘Pop’ — is no stranger to anyone who has frequented Chef Damian’s earlier establishments. Gilmore D’Silva was the first and only custodian of the Supreme Court. For 21 years, he safeguarded the keys, lived in the institution’s quarters, and occasionally cooked for the judges. In a full-circle moment, as Gilmore once looked after a civic institution that served the community, Chef Damian today stands as a guardian of Eurasian culture.

Echoing the warmth and communal spirit of Gilmore’s table, the menu features predominantly heirloom Eurasian recipes — some over 200 years old — alongside Chinese dishes inspired by Pop’s home cooking. True to Chef Damian’s philosophy of patience and precision, everything is made from scratch using traditional methods and designed for sharing. À la carte dishes start from $8++, complemented by wines (from $19++), beers (from $9++), and cocktails (from $20++). Guests are also welcome to bring their own bottles — no corkage fee, only a glass rental of $5 per glass.
