In line with the theme of SG60, please share one of the most under-rated food stall or eatery you know, and why more people should try it.

Off the top of my head, one of Singapore’s most under-rated eateries is Chicken House. It serves one of Singapore’s best and most under-rated chicken rice.

Food is, of course, a very personal choice. Everyone likes different things, but what I really appreciate about Chicken House is its old-school cooking style; and the flavours and textures that result from this adherence to traditional cooking techniques.

The chicken meat is firm and tender at the same time, with a very rich yet clean flavour. There is also a wonderful gelatinous layer just below the skin. Some of this is due to the eatery using what we call “kampong” chicken – they are reared freely, not in cages (lots of exercise!) and eat a variety of feed. In a way, they are the original free-range chicken.

Chicken House uses regular jasmine rice. The rice is satisfyingly toothsome and properly seasoned – though lightly. It’s the perfect partner to the chicken.

Everything else is on point, too. The accompanying soup is clean and flavourful; the chilli is vibrant and zesty, with fresh bright ginger and high-quality dark soy sauce.

All in all, it’s my absolute favourite chicken rice in Singapore.
