At Ichigo Ichie, Chef Akane Eno marks Mother’s Day with a dish that is arguably one of her most personal yet: a donabe inspired by oyakodon, a meal her mother used to prepare regularly because of Chef Akane’s fondness for egg dishes. For this special, she reimagines those simple, homely flavours into a dish that gently elevates memory with technique and seasonal ingredients.
Japanese rice is cooked with shin tamanegi – or newly harvested Japanese spring yellow onions, a seasonal ingredient that is soft, sweet and mild. The tender fluffy rice is then topped with simmered soboro, a uniquely Japanese dry meat mince. Here, it’s made from local yellow chicken; nira or Japanese garlic chives – also currently in season; and a rich scrambled egg yolk sauce enriched with uni and housemade soy sauce.
The donabe is finished with a special blend of nori and ao nori (Japanese seaweed flakes or powder), while additional uni is served on the side for diners who want to stir in extra richness.
