National Day 2024: Feasts of Local Flavours

Singapore’s turning 59, we’re in the mood to love local. From heritage specialities to inventive spins on our beloved classics, here are 10 spots where you’ll find a delicious taste of national pride.

 

CAMILLE

1. National Day Camille

Camille’s National Day 3-course dinner menu

 

Camille presents an artfully curated 3-course dinner menu ($85++ per diner with minimum 2 guests) to commemorate National Day, available for dinner from 6 August to 9 August and 11 August 2024. Choice of mains include the Argentinian Flat Iron Steak, served with salt-baked celeriac and finished with teriyaki glaze, banana shallot confit, and a rich buah keluak jus. To pair with the meal is a complimentary cocktail: the Pandan Paradise, featuring bold notes of Kraken rum accented by gula melaka and pandan syrup, made deliciously smooth with coconut milk and whipping cream.

At Chef X, current resident Wanting Kimchi offers the K-style Cai Fan in a fun play on the Singaporean staple of economic rice. This lunch offering is available from now till 26 August 2024 at a base price of $12, inclusive of rice, a regular banchan, and a premium or hot protein of the day; plated cai fan-style. The rotating selection of banchan includes signatures like the Addictive Apple Kimchi, Cucumber Kimchi, and Seasoned Cuttlefish.

 

CHOON HOY PARLOR

For Singapore’s birthday, indulge in a feast of heartwarming heritage, heirloom, and hawker fare at Choon Hoy Parlor. The communal set menu is offered at a special price of $59.90++ per pax (because Singapore’s turning 59!), available from 1 to 10 August 2024. Sumptuous mains include the CHP Signature Hainanese Kampong Chicken, silky and succulent chicken accompanied by sliced cucumbers, light soya sauce, and toppings of chopped ginger and scallions. The Teochew Steamed Fish of the Day is light and fresh, made irresistible with a finish of pork lard. Pair these with a fragrant bowl of the A Lil Lard, A Lil Soy, A Lil Love Rice; plump short grain topped with premium soya sauce and crispy lard.

Mark the occasion on 9 August with LeVeL33’s exclusive National Day menu ($268++ per diner), featuring the best of Singapore-inspired flavours and local produce. The world’s highest urban microbrewery boasts unparalleled views of celebratory fireworks illuminating the Marina Bay skyline — a sight to savour as you dig into renditions of the nation’s favourites, like a Free-Range Lamb Kofta Satay served with peanut sauce and pickled cucumber; and Beer Batter Cereal Tiger Prawns paired with curry leaf togarashi and a tangy pineapple and coriander salsa. Don’t forget dessert: there are Housemade Beer Churros to go with coconut sugar, kaya sauce, and salted chocolate sauce. Rempapa says there’s no place sweeter than home with their Multi-ethnic Kueh Box ($12 for 5-piece set, $24 for 10-piece set), featuring five handmade varieties of kueh from the culinary traditions of local ethnicities. These include the colourfully layered Gao Teng Kueh, banana-stuffed Putugal made with tapioca, and airy Sarang Semut. Available from now to 11 August for dine-in, takeaway, and delivery pre-ordered three days in advance, these treats are not to be missed for a taste of national pride.

 

THE GYU BAR

For the occasion, The Gyu Bar introduces two limited-edition creations that showcase flavours well-loved by the locals, available from 1 to 11 August 2024 for dine-in only. These dishes are bundled as a National Day Combo ($59++), the price a salute to Singapore’s 59th birthday.

The Wagyu Bak Kut Teh ($35++) is a heartwarming play on the traditional pork rib soup, plentiful with succulent Kagoshima rib fingers, bean curd puffs, and bean curd skin in a broth infused with familiar nuances of cloves, cinnamon, star anise, garlic, and other spices. Another twist on a local delight is the Wagyu Otak Katsu Sando ($32++), combining minced Kagoshima Wagyu with deliciously savoury, spicy fish paste in a golden-brown juicy cutlet. The cutlet is nestled between slices of toasted Japanese shokupan, complemented by fresh tomatoes, cucumbers, lettuce, creamy scrambled eggs, and a dash of house-made barbecue sauce and honey mustard.

 

THE MARMALADE PANTRY

Meet for mid-afternoon celebratory tea at The Marmalade Pantry. To commemorate both Singapore's National Day and their own 25th anniversary, the well-loved homegrown bistro is proud to present a special 25th Anniversary Afternoon Tea set ($78++, good for 2 pax). Available from 1 August 2024 onwards, the curated afternoon tea set stars a selection of sweet and savoury bites that play on the popular flavours of home.

The array includes “Chicken Rice” Quinoa Cake with Sous Vide Chicken, The Marmalade Pantry’s rendition of a nation-wide favourite; Bandung Purin infused with rose water, topped with tangy raspberry coulis and bittersweet rose petals; and Pandan Pulut Cupcake featuring a fragrant pandan cake frosted with velvety pulut hitam crème, finished with black glutinous rice and toasted coconut shavings — alongside other reimagined afternoon tea staples.

 

THE MASSES

It’s a big bash at The Masses, with the communal set menu available from 1 August to 10 August at a promotional price of $59.90++ per pax this year — a cheeky nod to our nation’s grand age. Stars of the show include the inventive Steak Tartare served with shiso Kueh Loyang, and a delectably tender Dry Aged Spiced Roasted Chicken paired with a piquillo pepper chilli jam (fondly evocative of the chilli that goes with chicken rice), parsnip puree, and soy sauce chicken jus. Of course, there’s the signature C&C&C&C&C&C Pasta (now with an extra C), its moniker referencing the “5Cs” of the “Singaporean Dream” — capellini pasta served chilled with confit lemon, chorizo, clams, crab meat, and caviar in a lobster bisque.

 

WILDSEED AT 1-FLOWERHILL

9. National Day Wildseed

Wildseed Café sets the stage for all-day revelry. Unwind in the idyllic retreat over an exclusive Rempapa x Wildseed Café National Day Afternoon Tea Set ($58++ for two pax) available from 1 to 31 August 2024 (9am to 4:30pm). Crafted in collaboration with local multicultural heritage restaurant Rempapa, the line-up features dainties like a Mini Croissant with Chicken Satay, Cucumber & OnionBlueberry Almond Tart with Blueberry Mascarpone, and a selection of Rempapa’s award-winning kueh.

As the sun sets, Wildseed Café transforms into Wildseed Bar & Grill, a cosy setting complete with live music for a bit of laid-back merrymaking. Their special for the occasion, offered from 5 to 11 August 2024 (5pm to 12am), is the National Day Archipelago Communal Menu ($59++ per diner). Sharing plates are inspired by well-loved Singaporean flavours and fare, like the Marinated Topshell ‘Kerabu’ Style, tantalising with the aromatic profile of lemongrass, coriander, kaffir lime leaf, and garlic chilli; and the hearty Buah Keluak Wagyu Beef Cheek served with fragrant coconut rice, tangy achar, and crispy papadam.

 

YÀN

YÀN celebrates Singapore’s 59th birthday with a National Day Dim Sum Menu (from $6++) available from now till 31 August, each delicacy combining Cantonese tradition with local inspirations. A highlight of the assortment is the Steamed Hainanese Chicken with Sticky Rice wrapped in Lotus Leaf ($8++ for 1 piece), a Cantonese interpretation of the Singaporean food emblem of Hainanese chicken rice. Parcelled in a lotus leaf are juicy morsels of chicken thigh, nestled in pearly glutinous rice fragrant with lemongrass, garlic, and ginger. The Pan-fried Singapore Chilli Crab Meat Bun ($9++ for 3 pieces) models the famed Chilli Crab; spicy, savoury crab meat stuffed in deep-fried man tou.
