Txangurro A la Donostiarra, the classic Basque preparation of spider crab baked in sofrito under a blanket of breadcrumbs; an umami-packed Carabinero en Bisque de Bogavante with red sea prawn, lobster bisque and lobster salpicon; and a traditional Bacalao al Pil Pil with salted cod, piquillo peppers, zucchini and a velvety salt cod emulsion all serve up deep ocean-kissed flavours.
